Carbon opportunity costs per kilogram of food

The carbon opportunity cost, measured in kilograms of carbon dioxide-equivalents per kilogram of food, is the amount of carbon lost from native vegetation and soils inorder to produce each food. If a specific food was not produced on a given plot of land, this land could be used to restore native vegetation and sequester carbon.
